Canadian Army Molasses Cookies

The Canadian Army Cook’s Manual was the official way to feed the troops in 1946. The recipe was designed to feed a lot of people… well, to feed an army. This is a scaled down version.


1 cup molasses

1 cup shortening

½ cup sugar

1 cup sour milk

1 ½ tsp baking soda

1 tsp salt

2 tsp finely grated ginger

1 tsp cinnamon

4 ½ cups flour


Heat molasses and shortening together and cool. Add remaining ingredients and mix together thoroughly.

Form into rolls about 2 inches in diameter, wrap in waxed paper and chill 2-3 hours.

Slice and bake on a greased baking sheet in medium oven (350°F | 180°C) for 15-20 minutes.
